- Meat – We used breakfast sausage but you can also use chopped ham, crumbled bacon, or even ground beef or turkey.
- Tater tots – Frozen
- Milk – We used whole milk, but you can also use skim or low fat.
- Half & Half – Heavy cream can also be substituted.
- Seasoning – We used cajun seasoning for an extra kick but feel free to use seasoned salt.
- Eggs – Large eggs.
- Cheese – Grated cheddar cheese and grated pepper jack cheese.
- Optional – Fresh parsley for topping.

How do you make a breakfast casserole with tatertots in the crock pot? (step-by-step directions)
⭐ First, spray the slow cooker with non-stick spray and layer half of the tater tots in the bottom of the slow cooker.
⭐ Next, brown and drain your sausage. Pour sausage on top of the tatertots in the slow cooker.
⭐ Then, whisk together eggs, milk, half and half, cajun seasoning and half of the cheeses. Pour mixture over the tater tots and sausage in the slow cooker.
⭐ Finally, top with the remaining tater tots, cover and cook. Before serving, top with remaining cheese and cover to let cheese melt.

We used ground breakfast sausage but this recipe also works well with crumbled bacon or diced ham! It’s also a great way to use leftover meat from dinner. Don’t be afraid to toss in small diced chicken, steak, or pork too.
What kind of tatertots?
We used frozen tater tots for this recipe. You can use traditional tater tots OR the crown shaped tots. Either will work fine!
Can I prep this ahead of time?
Yes! However, we recommend leaving the top layer of tater tots off until right before cooking. Prepare the recipe through adding the egg/cheese/milk mixture and store overnight in the fridge.
(Note: the cold ingredients may add to the cook time. Cook until liquid is gone.
What size slow cooker for this recipe?
We suggest using at least a 6 quart slow cooker to make sure all your ingredients fit and cook evenly.
Top with fresh parsley for a pop of color and fresh finishing flavor.

How long do the leftovers last?
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in individual portions on high heat in the microwave.

We don’t recommend freezing this recipe as eggs don’t typically reheat well after having been frozen and the tater tots will turn to mush.

✅ Try using different types of shredded cheese! Gouda is delicious, and my husband loves when we use mozzarella.

- 1 pound breakfast sausage browned and drained
- 1 package frozen tater tots 32 ounces
- ½ cup whole milk
- ½ cup half & half
- ½ teaspoon cajun seasoning or seasoned salt
- 6 large eggs
- 1 cup grated cheddar cheese
- 1 cup grated pepper jack cheese
- optional fresh parsley
Instructions
Place about half the frozen tater tots into the bottom of your slow cooker. Top with the browned sausage.
In a mixing bowl whisk together the eggs, milk, half & half, seasoning, half the shredded cheddar cheese, and half the shredded pepper jack cheese. Pour the mixture into the slow cooker, over the sausage.
Top with the remaining tater tots, cover, and cook on low for 4 hours, until no liquid remains.
About 30 minutes before serving, top with remaining cheese and cover. Finish with salt, pepper, and fresh chopped parsley immediately before serving.
