Everything Bagel Casserole Recipe
Our family has a couple basic breakfast casseroles that are super easy to make, and . Sometimes you want to dress up a basic recipe to include bolder flavor profiles.
We dressed up the basic casserole with bacon in the Bacon Breakfast Casserole. The Everything Bagel and Sausage Casserole is another simple casserole with bold flavors. We love that this is still a casserole that appeals to a lot of people!
This casserole is convenient to serve to guests because it is made up ahead of time and sits in the refrigerator overnight before cooking. So the mess can be cleaned up well ahead of the breakfast meal.
When we are feeling extra ambitious we like to mix up our own Homemade Breakfast Sausage to use in this casserole.
What is an Everything Bagel?
The first time I learned about Everything Bagels was last year when Thomas’ English Muffins invited me to share how to make gourmet butter recipes on TV. One of the gourmet butters I made is Everything BagelButter. Both the everything bagels and butter have a distinct combination of garlic and onion as well as a variety of other spices. We love enjoying these flavor combinations for a special treat!
Using everything bagels in a breakfast casserole is a great way to add more flavor compared to using basic bread cubes. Since bagels are denser than bread cubes allow more time in the refrigerator for the bagels to soak up the eggs before cooking.

- Cream Cheese

- Monterey Jack Cheese
- Eggs
- Pepper
- Salt
- Heavy Cream
- Chives
How to Make a Breakfast Casserole
- Brown the sausage in a skillet and place cooked sausage on a plate lined with a few layers of paper towels to help absorb extra grease. Cut up bagels into bite-sized pieces while the sausage is cooking.
- Spread the softened block of cream cheese on the bottom of a greased casserole dish, however, is easiest for you. See the picture below to see how I distribute the cream cheese in the bottom of the dish. I have tested this recipe by putting chunks of cream cheese in between the bagel and sausage layers and we didn’t like that nearly as much because the cream cheese doesn’t distribute as evenly.
- Freshly shredded cheese is our preference in the casserole, but if pre-shredded is what you have time to use that will taste good too.
- Layer the half of bagel pieces, sausage and cheese. Repeat with the remaining bagel, sausage and cheese.
- Whisk eggs, whipping cream, salt and pepper together and pour over the casserole. Distribute the liquids as evenly as possible, cover with foil and place in the refrigerator. I have tested this recipe with a 3-hour rest in the refrigerator and it tastes much better when the bagels can absorb the liquids overnight!
- Remove from refrigerator and allow to come to room temperature for about 30 mintues before baking. Keep the casserole covered with foil for the first 45 minutes to the bagels peaking out the top don’t burn. When the casserole is nearly done cooking remove the foil and allow the top to brown evenly.
- Serve immediately. Leftovers can be stored in the refrigerator. We recommend eating within one to two days.

Ingredients
- 4 large Everything bagels cubed
- 8 ounces cream cheese softened
- 8 ounces Monterey Jack cheese shredded
- 1 pound maple flavored sausage cooked and crumbled
- 2 cups heavy whipping cream
- 8 eggs
- 1/2 teaspoon freshly ground pepper
- 1/2 teaspoon salt
- 2 tablespoons chives
Instructions
Cook and drain sausage. Cut bagels into bite-sized cubes. Grease a 13 x 9-inch casserole dish.
Cut cream cheese into thin slices and may a layer of slices across the bottom of the baking dish.
Add a layer of half of bagel cubes, half of sausage and half of shredded cheese. Repeat layers.
Whisk eggs. Add salt, pepper and cream; whisk again. Pour evenly over the top of the casserole. Cover with foil and refrigerate overnight.
Remove casserole from the refrigerator and preheat oven to 350 degrees F. Bake 45 minutes covered with foil. Remove foil and bake for an additional 10 – 15 minute until the casserole is browned on top and set in the center.
Sprinkle chopped chives on top and enjoy!
